Designed for beverage and hospitality industry professionals who have graduated from the Company’s Academy of Spirits and Fine Service, the AMCA is created for those who want to further their education. AMCA will focus on the latest cuisine and dining trends as well as the finer points of wine and spirits knowledge. Will Conniff, Executive Vice President–General Manager of Southern Wine & Spirits of Illinois & Kentucky said, “We are extremely excited about our latest educational initiative—one which has been carefully designed for top chefs, bartenders, sommeliers and mixologists working in today’s beverage and hospitality industries. The new Southern Wine and Spirits Advanced Mixology Culinary Academy is a reflection of Southern’s ongoing commitment to help promote the highest levels of service excellence in the beverage and hospitality industries.” Based in Chicago, the Southern Wine & Spirits’ AMCA is the first to bridge the gap among the field, kitchen and bar by bringing the farmer, chef and bartender to the classroom. Southern Wine & Spirits Master Mixologist Bridget Albert, who conceived AMCA and will lead its expert instruction team, said, “AMCA students will have varied educational opportunities such as an overnight field trip to visit Master Distiller Kevin Smith at the Maker’s Mark Distillery in Kentucky and learn the art and history of distillation. They will also work with Chef Marshall Shafkowitz, Chef Cheryl Corrado and a team of pastry chefs from The Cooking and Hospitality Institute of Chicago to master knife skills and the art of pairing cocktails with food.” In addition, Ms. Albert noted that AMCA students will learn how to make their own bitters and will receive an overview of seasonal ingredients by the Chef’s Garden Farmer Lee Jones. Each session will offer the history and philosophy specific to the session subject. According to Mary Barranco, Director of Education, Southern Wine & Spirits of Illinois and Kentucky, “The AMCA program features many cutting-edge educational facets as well as a host of real-world beverage service innovations—all designed to elevate the skill and craft of today’s beverage and culinary professional.” The Southern Wine & Spirits Advanced Mixology Culinary Academy will begin July 14, 2009. This is a 10-week program with a fee of $650 per participant. All featured field trips, text books, knife kit and supplies are included in the cost.
